Canning...???!!!

When I told a friend late one night that Paxton and I were up canning, she said those were the last words she ever expected to come out of my mouth. It is pretty shocking. But I did all my research and was determined to salvage all those green tomatoes that didn't get a chance to ripen. We made a green tomato salsa with apples, peppers,etc... And it turned out pretty good. All of our jars sealed, so it felt like a huge accomplishment!
